Gingerbread Loaf Cake

This is very similar to the one at Starbucks.

Gingerbread Loaf Cake

Ingredients
  

Cake (Dry Ingredients)

  • 2 cups flour
  • 2 tsp baking powder
  • cup sugar coconut or similar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ground ginger

Cake (Wet Ingredients)

  • 1 cup plant milk oat milk or soy milk work well
  • ½ cup molasses
  • ½ cup applesauce
  • 1 tsp vanilla extract

Glaze

  • 1 cup cashews
  • ½ cup coconut cream
  • ¼ cup maple syrup

Instructions
 

  • In a large bowl, mix together all dry ingredients, ensuring they are evenly incorporated with one another.
  • Add all wet ingredients to dry ingredients and stir to incorporate.
  • Pour batter into a lined cake or loaf pan.
  • Bake for 45-50 minutes at 350º fahrenheit.
  • While the cake is baking, prepare the glaze by adding the cashews, coconut cream, and maple syrup to blender and blending until creamy.
  • After the cake is finished, allow it to cool fully, and then pour glaze over the cake. Serve immediately, and refrigerate any remaining.
