Gingerbread Loaf Cake

Ingredients
Cake (Dry Ingredients)
- 2 cups flour
- 2 tsp baking powder
- ⅓ cup sugar coconut or similar
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp ground ginger
Cake (Wet Ingredients)
- 1 cup plant milk oat milk or soy milk work well
- ½ cup molasses
- ½ cup applesauce
- 1 tsp vanilla extract
Glaze
- 1 cup cashews
- ½ cup coconut cream
- ¼ cup maple syrup
Instructions
- In a large bowl, mix together all dry ingredients, ensuring they are evenly incorporated with one another.
- Add all wet ingredients to dry ingredients and stir to incorporate.
- Pour batter into a lined cake or loaf pan.
- Bake for 45-50 minutes at 350º fahrenheit.
- While the cake is baking, prepare the glaze by adding the cashews, coconut cream, and maple syrup to blender and blending until creamy.
- After the cake is finished, allow it to cool fully, and then pour glaze over the cake. Serve immediately, and refrigerate any remaining.
