Bourbon is an American whiskey made from a mash that’s at least 51% corn and aged in new, charred oak barrels. Corn drives sweetness; new charred oak drives vanilla, caramel, and toasted wood.
Compared with rye whiskey, bourbon is usually rounder and sweeter with less peppery bite. Barrel char can add smoky caramel and sometimes a coconut/dill note depending on wood and aging.
